I am not going to cover all your points right now as I have to pack for my
journey home, however ther is a fluffy for the NT4 The dead kitten as used on
the stereo videomic is the one you want.

only real option. With a pair of shotguns you will still get aircraft noise.

However this will still mean some wind noise will get through. A blimp creates
a dead spot in the airflow.
Spending more money on some things and cutting in others may be the way
forward. Though if two seperate mics is what you want have a look the the Rode
M3. Not as directional but will suit your needs well. ( I think)...
