Hooking up an ADC to such a computer board would be a challenging
engineering project that requires decent know-how. I guess that it
would be probably easier to design a self-contained recorder with its
own integrated micro-controller.

The costs of the required electronic components is one thing. However,
one had also to invest several hundred (or thousand?) hours into
hardware and software design. So, I guess it would be better to buy an
off-the-shelf recorder (for instance the TASCAM HD-P2) and not to try
to reinvent the wheel...
