One way to do it is to bring a short cable out and put a female Neutric
NCFX-HD XLR on it. That's got O ring seals and a boot to seal to the
matching NCMX-HD XLR. I use these exclusively when making up cables.

Otherwise use mil spec waterproof connectors, with a short adapter cable
to go back to XLR.

It would be possible in theory to use wireless mic technology to do the
link as the case is plastic. That would get complex.

And while it's messy, a Neutric waterproof XLR plugged into a panel
connector that's well doused in silicone grease would work for quite a whil=
e.

The traditional way for a temporary cover is to put it in a condom. Only
works for small mics and is not the best for sound transmission.

Beyond that, I'm interested in ideas too. I've wondered if the
windscreen blimp type design could be built to provide at least good
rain protection.
