One thing that I have noticed other archives do is to replace
with ABC at Fish dot com - this may well protect addresses from being
stripped out of archive pages.
Birding Aus is also the only mailing list that I am getting spam through

I don't believe this is so. If the mailing list (that is, the
individual addresses on the list) had been harvested, those who post,
including me, would be getting spam individually. While I do get some
spam, I'm not getting the same set that I receive through B-A. What is
happening is the adress has made it onto some
spam lists, not the individual addresses.

It all depends on what you consider "lots" of spam.
Personally, I am subscribed to a couple of birding mailing lists and
quite a few IT-related ones, and birding-aus is the only list through
which I receive spam. Maybe I'm lucky, but still the fact remains that
the birding-aus mailing list is being/has been harvested by spammers.
Probably the only solution now is for individuals to filter it out as it
arrives, but it's still worth checking out whether there is anything
else that can be done.
