I haven't used real-time interfaces such as SPDIF, AES, Toslink, etc. for a
*very* long time, thankfully. All of my recordings are transferred from my
recording device into my computer as .wav files via USB2, Firewire 800 or
Ethernet. Much faster!
Regarding bitrate, I use 4,608,000 bps (24-bit word size, 96k sampling rate, 2
channels) as much as possible. This is more often referred to as "24/96";
bitrate specifications are equally valid but in my experience they are more
commonly used when working with perceptual coding systems (mp3, ATRAC, etc.).
Having said that, the Macintosh OS provides a bitrate value when doing a Get
Info on an audio file...
