If you just want to adjust levels on a particular channel in Wave
Editor:
Make sure you have the "allow separate channel selection" option
checked under View -> Options -> Waveform.
Then select the channel you want to adjust, open the processor
palette (Window -> Processor) and select "Change Gain" from the pop
up menu, and ensure selection only check box is ticked.
For plugins take a look at http://www.kvraudio.com/
you can narrow your search down to AU's and panning.
