Hi Rory,
I'm a big fan of the MK 21 capsules in an ORTF configuration. See my
website for examples. I consider the MK 21 sub cardioid or wide
cardioid a "half an omni". I find that with any natural soundscape
the sub cardioid provides a nice full stereo image.
I have a large zeppelin that I orient the ORTF array in sideways,
using Schoeps GVC capsule swivels.
Beware as other posters have mentioned in the past, Schoeps are
generally less reliable in humidity than other mics.
