Could be interesting, but be aware that the back of a figure eight
mic is out of polarity relative to the front, so some degree of phase
cancellation is inevitable. However, it's worth investigating because
any given source will appear in polarity to the front at a distance
of a foot (or however deep the dish is,) & out of polarity at a
distance of many feet to the back. It might be moot given the random
phase relationship, or it might be really messed up having a source
appear both close & distant.
