What about a Pelican or Storm case, they are supposed to be waterproof
and float. UK International has a line of "dry boxes" with tranparent
covers. (I would want to see what I was doing on the face of the unit)

Though I'm not sure what to do about heat sinking. You may want to
inquire with the manufacturer about the temperature limits of their
plastics and epoxy a heat sink to the outside of the box, or see if
any self contained computer cooling solutions will work. These guys
seem to have a broad range of options: http://www.thermaflo.com
One thing to look at is whether the thing would float weight-wise if
your canoe got dumped. I'm not sure any of these would if packed with
batteries.
