A technique that Rich Peet turned me on to has produced some very
pleasing recordings for me:

Use a stereo array for the front pair of channels. In your case, this
could be a pair of shotguns, coincident (crossed at the capsules) or
ORTF (17 cm) spaced.

Then put up "outrigger" left and right rear omni mics forty or fifty
feet off to the left and right. These pick up uncorrelated (no
phantom imaging) sound that fills in the surround.

Then there's the "blockhead" 4-channel omni array that Rich has been
developing lately.
