I can do that with SparkXL. The sonogram is part of the FXMachine filter
stack section, and you can turn that to realtime and listen to the input
sound while watching the sonogram if you wish, or even while setting up
the filter stack and checking filtering in realtime. I don't believe
it's having to keep it in a buffer, just keeps up with the audio stream.
It's no problem to switch on recording anywhere, and that will be done
without the FXMachine filter stack unless you specify for it to do it
that way or have that done through a filter stack you saved to file
earlier. I don't get into all the stuff it can do. I don't normally use
SparkXL as my input editor, but use Peak during the transfer.

Of course your problem is that SparkXL is mac. FXMachine was available
as a separate package in windows form, but I don't know exactly what all
it includes. The sonogram may be tied to SparkXL, it's listed as a Spark
plugin in the plugin menu.
