Hi Rob,
have a look to the Edirol R44 is actually the cheapest 4 channel
portable recorder (if you don't fancy hack the zoom H4).
If you have a computer Mac, you can build an Aggregate Device and use
two or more sound cards at time without issues.
Excellent free software you could use could be:

and whatever freebie you can find one the net.
