Though this solution isn't for the "purist", I've had some great 
success with "worldizing"  either mono signals-> stereo or stereo 
signals-> surround.
Warning: it will cost ya an D/A, A/D conversion.

For those not familiar with this:

mono-> stereo-    set up two speakers and place two mics  in front of 
the speakers so as to record what they are palying.  Play your source 
material thru the speakers and record their output to tape, panning 
hard left and hard right.  Sure, what you end up with is just the mono 
signal doubled, but the added ambience from the space that the speakers 
are in ( outdoors is usually best)  creates a nice sense of space and 
dimension.

stereo-> surround-  much like the previous setup yet with a set of 
front speakers, a set of rear speakers, and a center channel speaker  
if desired)....also 4 (or 5) microphones.
Feed the stereo signal thru all the speakers and record to 4 (or 5) 
tracks.   In your mixdown assign as much of the recorded signal to each 
speaker as desired to create the soundscape you want.

bake in a 350 degree oven for 30 minutes or until soft to the touch, 
set aside to cool....enjoy,
