Hi Jenny, As an ex-primary school teacher I can highly recommend the Gould League materials and staff for ideas on teaching children about all aspects of environmental education. Most states have branches - often attached to state Education Departments. Don't re-invent the wheel! Local birders helping teachers always has a novelty interest for children (different faces, voices etc.), as does outings to local bird spots and the use of equipment, especially binoculars and telescopes - but you may need a few more helpers with such equipment for a larger class group.
