A long time ago I got into embedded systems immediately following a 
single 10-week course at The Ohio State University.  In many ways that 
course was very similar to the Parallax "Whats a Microcontroller?" kit:

In the USA Radio Shack sells that kit for a reasonable $100.  See the 
links near the bottom of this page:
   http://www.turbocontrol.com/monitor.htm

But it sounds like you may already be further down the road (you did 
post in this forum!) so those kits may be too simple.  But you can 
download the PDFs for free from the Parallax website and see for yourself.
