Using the 8 channel MAX197 option it is possible to get upto aprox 8000
samples per sec with the supplied linux OS and Phil McCarley's adc module.
The source of which is in the files section of the yahoo group.

You may be able modify Phil's software to read the ep9302 adc channels. 
Though I understand they are slower than the MAX197 option.
