If I understand your question right, you're looking for an application 
idea you can use as for a project assignment.

Here's a suggestion for you:

Problem:
I work at a remote office from the company headquarters, which is in a 
different country. We communicate mostly via Instant Messenger, with 
calls being dispatched to me via IM. Our phone systems aren't tied 
together, so they have no way of knowing whether I am on the phone or 
not.

Challenge:
A small, relatively inexpensive network appliance which would monitor a 
phone line and determine if it was on or off hook and report the status 
to a client program on a remote PC via the internet.

This would require building a monitoring circuit that would determine 
if the phone line is on or off hook, reading that status into the 
embedded 7250, then figuring out how to communicate that status to a 
simple client program, possibly across firewalls and DHCP servers.
