What about a phpbb system instead of a Wiki.  That way
we can distribute the moderation and keep messages on
toppic.  Great example that comes to mind is
http://forums.gentoo.org  If topics are common enough,
they can be "closed" but still viewable (which results
in a "howto" type environment.  Moderators can be
appointed, and the moderation can then be distributed
to not be too taxing on any one person.
