I used a dummy head in Portugal but not very loud crashing waves

 With distance you will capture more sea noise which tends to be bland, adding 
more texture with close wave dynamic, or far away from the action and the sound 
of a stream / inflow. Depends on the sonic picture you want to paint... A 
composite approach would be to use the same mic at various locations (stand and 
listen for a good time, does it sound good there? record it...) with mixing to 
create the final impression.  
 

 Hydrophones will capture the thump of the wave and stones, sand moving around 
- difficult to deploy in stereo and to keep them in the same place. The sand 
erodes around the cable and off they go...
