Peter, I use Danuisoft, now owned by Aimersoft, for recording off screen with vision and sound to a wide choice of formats and compressions. It will also convert formats. You can select the recording screen area manually or it can automatically select the active window. A snag is that it requires audio, and cuts out when the audio finishes. It will also do simple video editing. You can also select the refresh rate for recording, which may help with jerkiness, but I haven't tried it with my default sound editor, Audacity.
