I've used Peak LE in the past, but now I use DSP Quattro:

The price is reasonable, and it works well for monaural or two-track
editing on my Mac G4 12" Powerbook and an iMac I use at work. It has
a nice, simple interface and handles Wave Arts (wavearts.com) VST/AU
plugins very well.  The interface has four plugin slots in a series.
Peak LE 6 might be better in some ways, but I'm happy with DSP Quattro.

I agree with Martyn that Audacity works very well, and it handles
multiple tracks.  Audacity has several big advantages. It works fine
for wave editing, adding & aligning tracks, adjusting gain, etc.;
it's easy to learn; it includes label tracks; it's free software
(GNU Public License); and it runs on multiple operating systems.
