I've noticed the difference in wind signatures for various pines and
other trees. The long needles of Ponderosa pine can really sing at
times.

It's also possible to tell time by sound in the forest. In the
absence of a storm, one can tell time in the mountains by the
activity of winds that start rushing up from warmer valleys between
9-10AM and then move back down in late afternoon. Various bird
species have their fairly precise timing on when they start singing
in spring.

On a more modern note, in central Utah I can tell the time in the
morning by the numerous commercial jets that pass over at 07:30 and
09:40 each day as they all go in and out of the SLC Delta airlines
hub in Salt Lake City.
