Hi Max, John and others interested in this. I'm pretty sure that most recordists on this list do use M-S plugs, some simple and some complex. I truly do hope that there are plugs that will allow for adjustments of side and mid gain and other variables that will also allow a recordist to undo these adjustments and access a file or digital mixing state that is very close to the original field recording. I haven't had a chance to test the plug John proposed, but I made a test with +matrix-- code written by Tom Erbe. http://tinyurl.com/yo5duf Maybe someone can figure out something I'm doing wrong, or maybe someone will find ways to do a "perfect reversal" when non default plug settings are used.
