Meaning the same audio on both channels? Simply mono. Are you aware

Sure, you can make an XY or ORTF pair of shotguns. Or do 1-point M-S
with a shotgun for the M. Since you record soundscapes, highly
directional may not be desirable for all occasions, though.
I support your efforts, but I've got to say that at the level you've
achieved so far, the packaging looks a lot better than the contents
prove to be...I'd be disappointed if I bought a soundscape CD and
discovered it was mono.
