Gianni --- I have a LINUX program I wrote that does FFT's and draws spectrograms from soundfiles. It uses the GTK graphics toolkit, the sndlib library, and my own FFT code. It doesn't yet read data from and i/o port, but in LINUX a stream is a stream is a stream, to paraphrase Ms. Stein. If you'd like my code, let me know and I'll mail it to you!
