Are you talking sonograms or just the waveform display? The waveform is
sound pressure vs time, sonograms split the sound pressure into
frequency, so are sound energy vs frequency vs time. A 3d graph, usually
sound intensity is represented by grayscale or color contouring and the
y axis is frequency with the x time.

 Many of the sound editors can do the waveform as in some forms of
detailed editing you might be editing that by drawing down at the sample
by sample level. Most don't generate it as you play, but generate this
on opening and run a marker line along it while playing. No real math is
involved in generating the waveform display. 

Sonograms are a different game with lots of heavy math involved in
generating the display data. I don't work with Linux, have only messed
with it occasionally, but do have one program on my G4 mac that can do
real time sonograms. It uses nearly all the processing capability of the
400mhz G4 just to keep the sonogram going at that speed. In fact at the
very highest resolution setting for the sonogram in SparkXL I'll begin
to get gaps in the scrolling display where the processor is not keeping
up. It produces beautifully detailed sonograms even at the slightly
lower resolution. And will do the display with log scaled frequency,
which is more true to life. All the other sonogram generators I have
take much longer than realtime, though at least one does about as good a job.
