Yours is an old chestnut indeed!
Usually applied to "How To Cook a Galah" which I heard many umpteen years
ago as a child (i.e. something along the lines of boil galah until stones
are tender). I'm sure it came initially from other cultures ...
I've never tried muttonbirds but they certainly were, and are, available for
purchase for eating.
It seems to be very definitely a matter of taste - perhaps like other native
animals such as kangaroo, emu, crocodile (all of which are currently trendy)
etc, etc?
And IF one is a carnivore of any species whatsoever (and leaving the heart
behind and speaking only from the head), why except any Australian native
species nowadays - unless, of course, they are endangered which is a totally
different matter altogether...
What's the difference with turkeys, chicken, duck, quail, squab, goose, etc,
etc, etc ...
Actually, I very rarely eat meat of any sort but that's a choice of the
heart not the head ...
