From a hardware design POV, toss the ADC and pot idea, use a rotary
encoder, much more accurate and reliable.

The TS7400 has I2S port brought out on it, you would still need a codec
chip and amplifiers. On the note of noise, if your deck has a digital
input just run digital all the way there.

I'd say to get the runtime you want you might need to power down the cpu
and have it wake itself once in a while.
