I've used U-Boot, Redboot, umon, LILO, GRUB, ...

In my opinion U-Boot is the nicest.

I'm porting it to a custom PowerPC board at the moment.
The custom board was developed relative to a Freescale
board, so most of the code existing in U-Boot already,
eg. CPU support, and device support.

I don't have a TS-7800, but its a Marvel ARM processor
if I recall correctly. A U-Boot port probably does not
exist for the TS-7800 yet. However, there will be something
close in the U-Boot tree, eg. if you look on the Linux NAS
website and find a device that uses the processor,
(Linkstation?) you'll be able to start with that.
However, you do need a very detailed knowledge of the
processor memory map, and the order in which things
get setup. If the TS-7800 has a bunch of CPLD registers
that need to be programmed to get the board running,
you'll need that code, eg. get it from the Redboot
source if they provide it.
