Any generic course about unix systems should do the trick for that part.
Having used Debian as my primary desktop for several years I could
immediately use the TS-7200 like any standard unix system. Only problems
I had were in getting the ADC conversion working (i.e. getting the timing
right).

The Linux Documentation Project (tldp.org) has lots of resources about generic
Linux things. For example Introduction to Linux [1] and Command-line
tools summary [2]. On the Debian side there is Debian Reference [3].
