The gentoo stage3 root filesystem is a good choice for nfs root. You may
want to point init somewhere else on boot though,
"init=/sbin/my_init_script" would do it at the kernel command line. A
good start would be /bin/sh.
Aside from that, it's also very easy to build a root filesystem using
gentoo's crossdev. Just google for 'tinygentoo'.
