.....when I vaguely recalled that RedBoot can be telnet'ed to while at the
RedBoot prompt. So how's this for an idea, a remote boot system....

   fconfig the board so it has no default boot sequence.

   setup an IP config

   on the host machine run an Expect script that reads a
    boot config file, puts up a menu, and on user choice, connects to
    the board on port 9000 and gives redboot the requisite load and exec
    commands to boot the system.

   The script could have options to e.g. set/clear default boot option,
    alter the Boot Timeout, alter the IP settings etc

This would be fine for developement and demos and would demonstrate the
essential flexibility the product has. If you really want to impress the
suites/managers then I'm sure a GUI front end could be implemented.
