You conect them via one of the serial ports, and then select the Modbus protocold to communicate. You will have to have a install a modbus server on the SBC. I have the code for a modbus server if you need it.

The disadvantage with Maple is that they have a god-awful configuration program for configuring the screens that only runs on Windows. Then you have your application in two pieces, one on Maple display, and the other on the SBC. Your program interacts with the touch screen by reading and writing the modbus registers. For simple applications, you could put all of the smarts in the touch screen, and have the modbus reads directly read your inputs, and modbus writes directly write to your outputs. I will eventually write a modbus server for the 72xx Arm boards that reads and writes the standard I/O.

If you use the 7300, you could of course look for a standard 640x480 VGA touch screen with USB mouse connection, and write the GUI completely from within the SBC. It does not have to be a "Linux" touch screen as another poster hinted. There are also relatively rugged touch screens, they are not all created equal.
