There are several possibilities....

It is possible to have a "router on a stick" :-)
It is possible to configure 2 or more different network addresses on the
same interface and route between them. There are reasons you might do
this.

In similar vein, you could setup a VPN tunnel to a VPN server or a PPP
over Ethernet connection and do routing.

You can get USB ethernet or WIFI adapters and do routing.

You could use one of the serial ports as a PPP over serial interface and
route.

You could use it to setup an 6to4 router (IPv6 to IPv4 encapsulation
tunnel - see rfc3056) and do IPv6 routing!

The possibilities are endless, if you are simply wanting some sort of demo
project.
