If you have any budget at all I would recommend going for Firewire (raw 
bayer output) cameras. For example the ones from the imaging source work 
ok. You can get to 60 fps without too much trouble.

I assume you are doing the "classical" color blob detection + 3D 
tracking(?) There are lots solutions out there, but I assume you want to 
build your own system.
