I will add my 2 cents since have just been through this process for travel.
It is obvious you are willing to spend the money and since you do
backpacking the lighting stand is probably out. I selected the Gitzo GT
1542T (2.2lbs) and the Really Right Stuff BH30 Pro II head (12 oz). Not
only does this pair come in at 3 lbs only, it also folds to just over 16
inches (41 cm) and fits in my pack. The legs will also get you very close
to the ground as was suggested is desirable for recording. Furthermore, the
combination, while spindly light, holds my Leica scope very comfortably, or
my Nikon D300 and 70-200 lens. In the notorious wind of Yellowstone, hang
you pack from the hook under the center post for extra stability. In other
word you only have to make this choice once in your life. I have a 200
series Gitzo tripod which I rarely pull out now that I have this. You will
have to buy an Arca-Swiss style plate and rig your mics for that, but that
is only about $50. If you have never used the A/S dovetail system, you are
in for a treat and will never go back.
I was able to catch the tripod on sale at the end of the year at B&H, and
with the RRS head the package came in at under $700. Hope this helps.

sound is worth a thousand pictures." R. Murray Schafer via Bernie Krause.
