Hi David,
I've been using Schaller Oyster guitar pickups. I dip the 'business end' in
a plastic coating for water proofing - a couple of coats should be enough.
I do find they profit from running them through a D.I. transformer. They
come with a 1/4" TR plug.
They're cheap and probably available at the local music shop.

They work quite nicely in ant hills as well :)
