Welcome, and prepare yourself for contrary advice. :-)
It depends on the depth of your pocket, but spending on quality mics
is well worth while. How are you are going to combine the dialogue and
natural effects? An easy way is to record them separately and combine
them afterwards. This can be done on a computer. Using just one mic of
course will still pick up speech and surrounding sounds, but using two
channels gives you the abilty to rebalance afterwards. You don't need
two recorders if you are mixing to mono, as almost all digital
recorders are at least stereo/two track.
The best all-round mic is a short gun mic like the Sennheiser ME 66 +
K6 and you will need a floppy mount and windshield for outdoors use.
This is a useful directional mic for both speech and field recording,
and two would give you a stereo capability. Below that price range,
there are other options.
The alternative for the speech is a lapel mic or a "boom mic" on
headphones, and quality is less critical here. This would give you a
one-hand operation with a small recorder in your pocket like a Tascam
DR-100. The joy of digital recording is that you don't need to get the
recording level set right - as long as you don't go into overload, you
can adjust levels over a wide range afterwards.
