Hi,

if I was you I would go recording the two M & S track separated and keep
them separate forever in a stereo file with M on channel L and S on
channel R. Every time in the future you will be able to adapt the
wideness of the stereo image as you please and how it fits best for the
current project.
You can use the brilliant free plug-in +matrix from soundhack to manage
your stereo file, included in the freesound bundle:

http://www.soundhack.com/freeware.php

On location you can listen just the M mic to find the golden spot and
then monitor both channel separate or matrixed, as you please, on your
stunning SQN mixer.

Enjoy your professional equipment.

Emanuele
