I've found that forward-facing omnis on opposite sides of a head-spaced 
baffle or barrier can produce a very spacious stereo image. But it 
takes some experimenting to nail down all the variables to suit your 
your taste with each individual rig. (To my ear, pointing omnis in 
opposite directions produces a slightly confusing image. But try it for 
yourself to see what you think.)

Another approach might be to integrate your 183s into small boundaries 
arranged in a wedge configuration. This can produce a nice stereo 
image, but the rendering of spaciousness will be somewhat less natural 
and more compressed -- rather similar in many ways to ORTF or MS rigs.
