Hi Alan & welcome to the list!
Of the mics you list, the 480's with omni capsules on one of Curt's
rigs directly into your 744T should be impressive for ambience.

I've taken 414's out a few times. I'm not sure why, but they were
noisier than the specs would suggest, a tad "warm" and they had more
issues with the wind than I'm used to.
Don't be afraid to experiment though. Some of the more useful
discoveries have stemmed from folks trying mics, rigs, techniques and
subjects that didn't seem to be promising.
