I tried just that, with a Marantz ECM8 single point stereo mic,
suspended in crossed rubber bands inside a peanut feeder with a sock
over it. Heck, I'm not subjecting my Sennehisers to the vibration of a
bike :)
It was a dismal failure. The mic works okay when still, but the rumble
of the road is about 20dB up on the wanted signal. I was after the
sound of sparrows (I'm in the UK, they belong here, fwiw) in the old
hedge either side of the cycle path. You get a clearer view of
territory and the interplay between individuals as a cyclist, but the
moving recording was a wipeout - you can hear it on

Sparrows are wary - if you stop and try and record them they tend to
shut up, though looking intently at the opposite hedge and pointing the
mic behind you can sometimes work :)
I'm going to give it a go with some OKMII binaurals today but I think
wind noise will kill them.
I'm not some sort of hard nut cyclist either - I cycle along at a
paltry 8-9mph as I'm doing it for transport not competition.
