What you are after used to be called a Froglogger, as the frog folks
were the first to use them extensively. There are several commercial
models, a google search should find a bunch of stuff.
The one I remember right off was pretty complex and may not be what you
want to get into, pretty expensive too:

Most of the rest I've seen have been based on some scientific data
logger controlling a cassette recorder. The big problem there is that
such data loggers are very expensive. The ecopro above is a cheap example!
There are quite a few homebrew jobs around. These are some simple timer
set up to turn power on and off to a cassette recorder. A minidisc will
be slightly harder as it's microprocessor controlled so you have to do
more than just turn the power on. As noted the sony's have a
standardized remote pattern for many and it does have a (undocumented by
sony) record function.
Note for real scientific value you have to set up some system that will
time stamp the recordings. It's built into some minidiscs.
