For hotspot/regional summaries, that depends on whether you are accessing via the american (http://ebird.org/ebird/) or the australian portal (http://ebird.org/ebird/australia/). An easy way to check this is to see whether you have just 'ebird' or 'eremaea ebird' on the top left, the latter is the australian portal. 

For individual checklists, this can be changed with your settings- go into preferences (by clicking on your username at the top right of the page), and make sure that english (Australia) is selected.
