I generally favour capitals for specific species (Red and Great 
Knots), keeping the lower case (knots) for the non-specific version. 
For Kangaroos, you would have Red Kangaroo as one of Australia's 
kangaroos. 

Are there particular reasons (apart from typing hassles) for not 
capitalising?
