That Google search link came up with this intereting URL for building what they call a microphone breakout cable: http://www.crunchgear.com/2009/05/28/diy-an-ipod-touchiphone-microphone-and-headphone-breakout-cable/ I can only assume that Apple was sensible enough to use a standard 4 connector phone headset socket on their phones.
