More favourite colours, these are some of my best memories:

The desert (Central Australia):
Shining vivid cobalt-blue of male splendid wren, seen against orange desert
sand.

The rainforest (Kakadu NT):
Neon-blue wing-stipe of Rainbow Pitta seen against gloomy green shadows.

The high-country (Central Tablelands NSW):
Pure red of Crimson Rosellas seen against crisp white winter snow.

Dry woodland (Capertee Valley NSW)
Vermillion-red of Red-capped Robins seen against blue-green of woodland
foliage.

Outback travelling:
The shot-silk flash of green as a flock of Budgerigahs wheels in flight,
seen against a brilliant blue sky.
