[ts-7000] TS-7250 Heart Monitor project

I would like to create a heart monitor using a ts-7250 my school just 
purchased.  I would like to read input from a microphone and display it on a 
screen.  I got the board hooked up to my desktop via the 9 pin serial port and 
running a terminal emulator.  But that is about as far as I have gotten.  How 
could I hook up a microphone and a screen so that I can write some code that 
will do what I need?  If I use C how do I get input from the microphone and how 
do I display it on the screen.  Is there anything special I need to do for the 
TS-7250 compared to Windows?  I am really lost at the moment.
