For ARM-Linux programming, the TS-7xxx boards would work
for you.
There's also the Linksys NSLU2 'Slug' which is a hackable NAS
http://www.nslu2-linux.org
The Philips/NXP LPC2000 series of microcontroller is also
a lot of fun to play with. Companies like Keil (now ARM),
Olimex, and Sparkfun electronics have pretty reasonable
development kits. There's also a very active Yahoo LPC2000
group.
