Programming Embedded Systems with C and GNU Development Tools (2nd Edition) (O'Reilly)

Embedded Linux Primer, A Practical Real-World Approach (Prentice Hall)

Also, if you know Linux, gcc/g++ and C programming, especially a very good understanding of pointers you should be up and running quickly, and not absolutely need books.
